Most people don’t realize that there is a difference between sweet almond oil and regular almond oil, also known as bitter almond oil. Sweet almond oil is a fixed oil, a carrier oil which does not evaporate. Bitter almond oil is an essential oil, which is a volatile oil that does evaporate. Essential oils come from plants and are typically used for scent, flavor, and aromatherapy.
Sweet almonds come from the tree Prunis dulcis, var. amygdalus, while bitter almonds come from the Prunis dulcis, var. amara. You can tell the difference because the tree of the sweet almonds has white flowers while the other has pink flowers. Both trees are native to Pakistan, Syria, Israel, and Turkey. Sweet almonds are used in many varieties of food. Bitter almond was used sparingly for flavoring long ago, but because of its potential toxicity, it is no longer used internally. In cosmetics, bitter almond oil is generally used for its scent. Conversely, sweet almond oil is used for more practical purposes. It is a great lubricant and works well for sensitive and dry skin.
It comes from a tree but a different one from Sweet Almonds. Raw bitter almonds come from (Prunus dulcis, var. Amara) while Sweet Almonds come from ( Prunus Dulcis, var. Amygdalus) The sweet almond tree usually has white flowers while the bitter almond tree has pink flowers. Both the bitter almond trees as well the sweet almond trees are small deciduous trees growing between 4 – 10 meters in height and were originally native to an area in the middle east stretching from Pakistan west to Syria, Israel, and Turkey.
The bitter almonds produce a small quantity of fixed oil along with an emulsion that yields glucose, hydrogen cyanide (aka prussic acid) , and the essential oil of bitter almonds, which is nearly pure benzaldehyde.
Bitter almond has been used historically in small amounts for flavoring in certain dishes such as almond syrup and the Italian amaretti. However, due to its potential for toxicity, its use internally has been discontinued in the present day. This is why we use pure natural benzaldehyde in our almond-scented products so that they are completely safe.
Like olive oil, sweet almond oil is produced by pressing the nuts or fruit in order to acquire the oil. It’s referred to as “sweet”, rather than just “almond oil” because there is a bitter almond oil that is most commonly used for scent. Sweet almond oil, or Prunus amygdalus var. Dulcis as it’s scientifically known, is safe to ingest.
